# Steps:

01 - Preheat the oven to 375°F.
02 - In a large oven-safe skillet, melt the butter over medium heat. Add leeks and sauté for 2 minutes until softened.
03 - Add mushrooms, cauliflower, and bell pepper. Cook for 4–5 minutes, stirring occasionally, until vegetables begin to soften.
04 - Add kale and cook for another 2 minutes until just wilted.
05 - In a bowl, whisk together eggs, heavy cream, salt, pepper, smoked paprika, thyme, and chopped parsley.
06 - Pour the egg mixture over the vegetables in the skillet. Sprinkle Gruyère and goat cheese evenly on top.
07 - Cook undisturbed for about 5 minutes, until the edges begin to set.
08 - Transfer the skillet to the oven and bake for 12–15 minutes, or until the center is just set and the top is golden.
