Warm Hearth Vegan Stew (Printable)

01 - 2 tablespoons olive oil
02 - 1 large onion, diced
03 - 2 cloves garlic, minced
04 - 3 medium carrots, sliced
05 - 2 celery stalks, sliced
06 - 2 medium potatoes, peeled and cut into 1-inch cubes
07 - 1 medium parsnip, peeled and diced
08 - 1 cup diced butternut squash

# Steps:

01 - Heat olive oil in a large pot or Dutch oven over medium heat. Add diced onion and sauté for 3-4 minutes until translucent and fragrant.
02 - Stir in garlic, carrots, celery, potatoes, parsnip, and butternut squash. Cook for 5-7 minutes, stirring occasionally, until vegetables begin to soften.
03 - Add chickpeas, white beans, diced tomatoes, vegetable broth, smoked paprika, thyme, rosemary, bay leaf, salt, and pepper. Stir thoroughly to incorporate all ingredients.
04 - Bring to a boil, then reduce heat to low. Cover and simmer for 30-35 minutes until all vegetables are tender and flavors have melded together.
05 - Remove bay leaf and discard. Taste stew and adjust salt and pepper as needed.
06 - Ladle hot stew into bowls and garnish with chopped fresh parsley. Serve immediately.
