Snowy Day Low Fat Chicken Stew (Printable)

01 - 14 oz boneless skinless chicken breasts, cut into 3/4-inch cubes

# Steps:

01 - Heat olive oil in a large pot over medium heat. Add chicken cubes and cook until lightly golden on all sides, about 3 to 4 minutes. Remove and set aside.
02 - In the same pot, add onion, carrots, and celery. Sauté for 4 to 5 minutes until softened. Stir in garlic and cook for 1 minute until fragrant.
03 - Add potatoes, bell pepper, green beans, bay leaves, thyme, rosemary, salt, and pepper. Mix well to combine all ingredients.
04 - Pour in chicken broth and water. Bring to a boil, then reduce heat to gentle simmer. Return chicken to pot. Cover and simmer for 25 minutes, stirring occasionally.
05 - Add frozen peas and simmer uncovered for 5 minutes until all vegetables are tender and flavors meld together. Remove bay leaves and adjust seasoning if needed.
06 - Ladle stew into bowls and garnish with chopped fresh parsley.
