01 - Preheat the oven to 400°F.

03 - In a large bowl, combine the carrots, bell pepper, zucchini, red onion, and cherry tomatoes.
04 - Drizzle the vegetables with olive oil, sprinkle with dried herbs, garlic powder, salt, and pepper. Toss until evenly coated.
05 - Spread the vegetables in a single layer on the prepared baking sheet.
06 - Roast for 25–30 minutes, stirring once halfway through, until vegetables are tender and slightly caramelized.
07 - Transfer to a serving platter. Top with fresh parsley and lemon zest if desired. Serve warm.
