01 - 14 oz uncured chicken or turkey sausage, sliced

→ Vegetables

02 - 1 medium sweet potato, peeled and diced
03 - 1 red bell pepper, diced
04 - 1 green apple, cored and chopped
05 - 1 small red onion, sliced
06 - 2 cups Brussels sprouts, trimmed and halved
07 - 2 cups baby spinach

→ Aromatics & Herbs

08 - 2 cloves garlic, minced
09 - 1 tsp fresh thyme leaves
10 - 1 tsp fresh rosemary, chopped

→ Oils & Seasoning

11 - 2 tbsp olive oil or avocado oil
12 - ½ tsp sea salt
13 - ¼ tsp black pepper
14 - ¼ tsp smoked paprika

# Steps:

01 - Heat 1 tablespoon oil in a large skillet over medium heat. Add sausage slices and cook 4–5 minutes, turning occasionally, until browned. Remove and set aside.
02 - Add remaining tablespoon oil to the skillet. Add sweet potato and Brussels sprouts. Sauté 5–7 minutes, stirring occasionally, until sweet potato begins to soften.
03 - Stir in red onion, bell pepper, and apple. Cook 5 minutes until vegetables are tender and slightly caramelized.
04 - Add garlic, thyme, rosemary, smoked paprika, salt, and pepper. Cook 1 minute until fragrant.
05 - Return sausage to skillet and add baby spinach. Stir until spinach wilts and everything is heated through, 2–3 minutes.
06 - Taste and adjust seasoning if needed. Serve hot.
